Easy Lentil Tacos... & no running for training for a half marathon (Say what?)

OK - I am no cook & I am not a person that does great food photography.  I just want to eat it, not take great pictures of it... but I wanted to share one of my latest recipes I've tried that is AMAZING


Easy Lentil Tacos!!! 
(The name even says its Easy - my kinda recipe!)

Ingredients:
1 tbsp Olive Oil
1/2 onion, chopped
2 cloves garlic, Minced (NOTE - I didn't use this & it was fine without)
2 cups vegetable broth
1 cup dry lentils
2 Tbsp Mexican seasoning
12 corn taco shells
2 cups finely shredded cabbage
1 cup fresh salsa
2 avocados

Instructions:  
Heat oil in a large pot over medium-high heat.
Add onion & garlic & cook 6 to 8 minutes or until tender and golden.
Add broth, lentils & Mexican seasoning; bring to a boil.
Reduce heat, cover & simmer 20 - 25 minutes or until lentils are tender.
Uncover; mash lentils slightly (I forgot to do this - again turned out fine) & cook 6 to 8 minutes or until sauce is thickened.

Spook mixture into taco shells; top with cabbage, salsa & avocado

The lentils taste really 'meaty' & I am hooked to have cabbage on top of my tacos now.

Week 13 Half Marathon Training

Week 13:

Monday - Plyo Extreme
Tuesday - Upper Body Extreme
Wednesday - Pilates Extreme
Thursday - Dirty 30 Extreme
Friday - rest 
Saturday - Walk 3.39
Sunday - rest


So yeah - the half marathon is 2 weeks from Saturday ( SAY WHAT???? ) & here is my training for the week... with no running.  

Needless to say, my mental game is kicking in right now because this is freaking me out knowing I'm loosing some of my running endurance while my knee is deciding to throw a fit like Veruca Salt ...

& with my mouth pain & feeling like someone has punched me, I just am feeling like the world is taking its jabs at me lately

... & yet, I have 2 weeks to be ready for 13.1 miles.

Sigh...

I'm just coming to grips that while all my races for the Triple Crown were better than my previous races from last year, this half marathon?  Probably ain't gonna be a goal setter.

I just want to finish.  That's my goal now.  Goals shift.  That's ok.  That's how life works.
I just want to cross the line, get a medal.  I'm really getting my mind set with this kind of thinking...


I'm hoping these last 2 weeks of training really takes a turn & gives me a boost of confidence.  But if not, it all makes me stronger in the end, right?

Pressing on!!!

  1. Ohhhh easy is my favorite work in a recipe! Haha! Totally pinned that for later! Good luck with your training. Hopefully the pain will subside and you will rock it!!!

  2. Oh man, I'm really hoping your knee shapes and cooperates! I'm glad you're comfortable to readjust your goals, though- don't push yourself into an injury!
    Those tacos look delish, but I have a meat eating husband that would give me "the look" if I told him we were having lentil tacos :)

  3. Those tacos look amazing! I love shredded cabbage on tacos. And I hope the knee and mouth feel better soon. I really don't think you'll lose that much endurance in the last 2 weeks. You've been diligent with the training and you're still cross training!

  7. Yum! I love lentils in my soft tacos -- I haven't tried doctoring them up before though. I'll definitely try your recipe. Usually I just cook them (in plain water) and then mix some salsa in with it.

    I hope your knee is just playing a delayed (and not funny) April Fool's joke on you. Even so, all your training up to now has not been for nothing! Hang in there!!

  8. I've never tried lentils...are they just beans? I know that's probably one silly question. Girl, you need to crank up "More Than Conquerors" by SCC. I just got off the treadmill and that was my main jam to get me through. Don't despair about your training...you are awesome REGARDLESS!

  9. i'm doing those extreme workouts too (not to train for anything just to lose weight). There's a lot of jumping in those - that doesn't bother your knees? you're going to do awesome on your half marathon! those workouts are hard!

  10. I looove lentils and I looove tacos so I have to try out that recipe! It sounds like you are doing an amazing job with your training despite how you're feeling- it's so easy to just want to quit or stop all together. Finishing is a huge goal all in itself!

  11. Yay, the race is just around the corner but that must also be scary because it's right around the corner. I think you'll do great because you've been training and keeping healthy and not injured is always a good thing.

  13. I just want to remind you that I was in such pain after the wdw marathon last January that I did not run at all to train for Princess in February or Tinkerbell in May and I did just fine. You know your body well enough to know what you are capable of and when to adapt when need be. Perhaps your knee just needs a rest for a few weeks.

    I've never had lentil tacos but I I did see a cauliflower taco recipe I want to make. You use the broken up cauliflower in place of ground beef. You saute it with taco seasoning. I saw it Mae once and it looks so much like taco meat. I'm anxious to give it a try!

  16. The taco's look great! I've never had lentil tacos, but last night was taco night in the traditional sense, and they were yummy:)
    So sorry about the knee. Just keep listening to your body. I would assume you're pretty much already trained for the race, not a whole lot of what you do the last 2 weeks has much benefit for a race. It's mostly for keeping you loose. So you might not be hurt at all by not running. Try a few other things that don't hurt your knee's, but still give you cardio benefits and hopefully you can get the knee pain gone and have a great race in a few weeks.

  17. Yum! I've made similar tacos and love them. I tend to mash my lentils up though, but that's just how I roll. The most important thing in this post is that you look awesome! So slim! You're going to look great in your race pictures, and really, isn't that what matters most?!

  20. This looks delicious. I'd probably make it without the lentils and use a meat. I'm not a big fan of lentils, this sounds delicious regardless though. I'd probably eat far too many.

    I really think you're going to rock this half marathon regardless of how you're feeling now, you're ready for this girlfriend!

  21. those lentil tacos look so yummy! i love using lentils in place of meat. and girl, i am soooooooo not ready for the half i'm not even kidding. not even a little bit. hopefully i get a long run in this sunday but it's not looking good.
