You ask, I listen... that's how I roll
So a lot of you were interested in the Enchilada Pie I made last week. You ready for this easy recipe? Because let me tell you, its EASY & oh so yummy!!!!
The ingredients:
Extra Lean Ground Beef (it calls for 1/2 lb for 2 people - I used a full lb. though - all the other ingredients I used the same measurements & it all still turned out good
14 oz can diced tomatoes -undrained
1 packet taco seasoning mix
1/2 c chopped onion
1 small can sliced black olives - drained
Flour Tortillas
1 c. shredded low moisture mozzarella cheese
You just brown the beef & then add in the can of diced tomatoes, the packet of taco seasoning, onion & olives. Let it simmer for just a few minutes to get all mixed together good.
Get a pie plate & layer the sauce, a toritilla, then cheese ... do it as deep or as much as you want. I just had two layers & it was great.
Sprinkled with cheese on top also & then cook at 350 for 30 minutes - uncovered.
I was surprised it called for mozzarella but it browned up so nicely & was a great taste with it. We both really enjoyed the olives in it too! And if you were a real fan of veggies, which I am NOT, you could probably add corn into the mix for a Mexican add in.
When it comes out, we just cut it like you would a pie & it was excellente! (like my Spanish thrown in there? Just for my Mexican dish of the day!)
See...simple! or "easy-o" if you want to go all Spanish again!
