But here we go. These are so easy & yummy!!!! As I told someone, my husband had the "pickiness" of a small child & he has ate the whole batch himself as of last night. I think I got 3 Energy Bites... but its ok because I've got all the makings for more.
I will say, I got this from a site called Smashed Peas & Carrots ... (dont want anyone thinking I'm this creative... I'm not)
No-Bake Energy Bites
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls & enjoy! Store in an airtight container & keep refrigerated for up to one week.
(They didnt last but 2 days... forget a week)
Notes:
Oatmeal - I used regular oats - not the minute oats (dont know if that makes a difference)
Peanut butter - Yes Dawn, next time, we're using Almond Butter too. I LOVE Almond Butter
Honey - I actually used a little bit more to make it "stick" better
Coconut - I used sweetened (of course... why not)
Flaxseed - I actually used whole flaxseed & it worked just fine. I actually liked the extra-"nutty" crunch with it
Chocolate Chips - I used regular size milk chocolate ones
Vanilla - nothing to add, but since I had a comment on everything else, figured I write nothing valuable here :)
I actually like them cold out of the frig, but Ricky has been putting the Energy Bites in a bowl & warming them up in the microwave, eating them warm.
And I'm not sure exactly where the 'energy' comes from - the peanut butter? The sugar from the honey? But I did eat 2 before I ran yesterday & they were a nice little boost.
So go for it! Make some! Let me know if you do & how you like them.
I have to make treats for the staff a week from Friday. These are on my "maybe" list. Instead of mini-muffins?

Ooh...those sound so YUMMY! That picture you posted yesterday had my taste buds working overtime! Where in the world do you find coconut flakes? At the grocery store?

I have a recipe that is so similar to this...however I add my protein shake mix in there too...that way I can add some more protein to my diet and it makes it more filling. :) I haven't made them yet...but I'm thinking my son and I will make them tomorrow for an afternoon snack. :)

ReplyDeleteYep I'll swap out almond butter, and agave nectar for the honey. Let's see, on the flax seed, when you grind it, you get the omega benefits from it, and the seeds themselves are hard to digest, so I hear. Just some random flax seed thoughts for you ~~ your welcome =)
